[Low Carb] Belgian Waffles and Pancakes

  • 1/4 cup skim ricotta cheese
  • 2 large eggs
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp baking powder
  • 3 packets Splenda
Beat eggs with electric mixer until light and fluffy. Mix in all other ingredients. Beat until smooth. Ladle onto hot griddle and cook like pancakes – a couple of minutes on each side.
